Country Apple Crumble Cake

Ingredients

Cake

·         1/2 cup butter, softened

·         1 3/4 cups flour

·         1 teaspoon baking powder

·         3/4 teaspoon salt

·         6 ounces cream cheese, room temperature

·         1 1/2 cups sugar

·         4 large eggs, room temperature

·         1 teaspoon vanilla

·         1 lemon, zest of, grated

Apple Crumble Topping

·        1 tablespoon butter

·        3 cups golden delicious apples, peeled, cored and sliced crosswise (about 2.5)

·        3/4 cup flour

·        3/4 cup sugar

·        1/4 teaspoon cinnamon

·        1/8 teaspoon salt

·        6 tablespoons butter, cut into 1/4 inch pieces

Steps

1.        Preheat oven to 350 degrees.

2.        Lightly butter a 9 inch square pan and dust with flour or use nonstick spray

3.        For the topping:

               i.          Melt 1 tbsp butter in a skillet.

             ii.          Add the apple slices and saute’ over medium high heat for 2 minutes-stir often.

4.        For the cake

               i.          Sift the flour, baking powder, and salt into a medium bowl and set aside.

             ii.          In a large mixing bowl, use an electric mixer to blend the butter and cream cheese

            iii.          Gradually add the sugar-1/2 cup at a time.

           iv.          Add the eggs one at a time

             v.          Add flour, 1/3  at a time

           vi.          Add vanilla and lemon zest.

          vii.          Pour the batter into the prepared pan and smooth with a spoon.

5.        Finish the topping, by combining the flour, sugar, cinnamon, and salt in a large bowl.

6.        Rub the butter into the dry ingredients until the crumbles are uniform.

7.        Sprinkle half of the crumbles over the batter

8.        Add the apple slices.

9.        Top with the apples with the remaining crumbles.

10.    Bake on the center rack for 50-60 minutes.

11.    The cake will pull away will pull away from the sides of the pan and the top will be golden brown when it is done.

12.    Allow the cake to cool in the pan on a wire rack.
